pt. 30: The Alpine Giant

Howdy, folks, and welcome yet again to one heck of a dairy diary. Yessir, we’ve got some excitin’ news for you on this winter’s day.

 

As you all know, Those Vegan Cowboys have been making headway and more with the production of caseins in the lab – that good stuff that real cheese is made from. Now, when you’re making caseins, you better have a good plan to start turning that stuff into delicious cheeses! Well, that’s exactly what we’ve been aiming to do, so we brought in some outside expertise. Can’t reinvent the wheel by ourselves, and luckily we don’t have to neither. To that end, we’ve reached out to a true mountain giant, from among the green hills and blue lakes of the Allgäu region of Germany: The Hochland Group.

 

Now these guys have been making cheese for a good long while now, close to a hundred years already! During that time, they’ve grown to be one of the largest cheese producers in Europe. Their brands like Almette, Grünländer & Patros, or the vegan brand Simply V. are just a few examples that might ring a bell or two. So these Alpine experts know their stuff, suffice it to say, and we’re happier than a hog in the mud at their enthusiasm to start workin’ together. They know their way around a casein, and we can’t wait to see what sorta hard and semi-hard cheeses they come up with when presented with Margaret’s Gold – the caseins from our hard-working lab.

 

Entering into this cooperation with the Hochland Group is a victory for us all, I tell ya. First of all, making these cheeses using the microbial casein from our lab means that we’re lightening the load of mass cheese production for cows. With Hochland as our partner, we’re working on making an alternative that’s as good as the real thing – and big partner equals big relief for the cows.

 

Apart from the cows themselves, all of us ain’t any less a winner in this scenario. With Hochland’s monumental cheese know-how and market coverage, they are a dream partner to get Margaret’s casein out there. It’s high time we spread the message, that you don’t need to make cows do all the work anymore for a bit of cheese. Hochland’s on the same page as us, holding high the value of family-owned farms and long-term sustainability. With their expertise, there ain’t no stopping us.

 

Well there ya have it folks! It’s just a matter of time before these delicious cheeses are down at the cheese aisle at your local supermarket, ready for you to try them.
