#34: Hot news in The Windy City
It was the summer of heat domes and melting asphalt.
The kind of July where the news leads with thermometers and everyone quietly wonders how many more of these we can take. Good time, then, to ride into Chicago with a story about what happens when you take the cow out of dairy. And discover that the rabbit hole goes a whole lot deeper than cheese.
But before ridin’ out to the Wild West, we had two saddlebags to pack.
We had business to settle with the United States of America. The paperwork kind. Together with fellow fermentation pioneers Formo, we filed our self-affirmed GRAS dossier with the FDA: that’s government slang for ‘Generally Recognized As Safe’. It’s the regulatory milestone that clears the path for a new food ingredient to enter the US market. We filed quietly back in December ’25, coyote-style, but now it’s out in the open and the confirmation is pending. The science is airtight, the homework handed in. The US market is not a question of if. It is a question of when, and when is getting close.
One saddlebag packed. Time to fill the other.
And fill it we did, with our latest breakthrough: Margaret’s Finest, our precision fermentation discovery platform. That’s what we brought to IFT FIRST in Chicago, the world’s biggest food innovation conference, where the people who build tomorrow’s food system come together once a year in a city that in mid-July feels like standing inside a pizza oven. Fitting, as it turned out.
Here is the thing most people still don’t know.
Casein is not one protein. It is a whole family.
The dairy industry has spent a century working with whatever the cow happened to produce, one branch of one family tree, while the rest of nature’s dairy protein library sat untouched on the shelf. Buffalo, goat, sheep and beyond. Each species evolved its own version, tuned by millions of years of biology, each with functional properties no food scientist has ever had the tools to properly explore.
Until now.
Margaret’s Finest is built to unlock that entire library. No animals required. No supply chains at the mercy of drought, disease or geopolitics. No biological ceiling. And no messin’ about with animal moms and their offspring. Just proteins as nature designed them, produced by microbes, available at scale, ready to be fully understood for the first time.
Think a buffalo casein so superior in melt and stretch, every pizza night feels like Naples. A sheep casein so gently digestible it could transform what recovery nutrition looks like in hospitals. A goat casein that rewrites what a post-workout shake can actually deliver. And that is just the beginning. We are mapping territory the industry has never entered.
Meanwhile, outside the conference hall, Chicago baked. The kind of heat that lands on your shoulders the moment the automatic doors slide open and reminds you, viscerally, that the planet is running a tab we are all going to pay. Dairy farming is one of the heaviest items on that tab. Land, water, methane, feed. A system that made sense for centuries and is starting to buckle under the weight of ten billion people and a warming world.
Precision fermentation is not a silver bullet. But its stainless steel can do a lot of good.
Every wheel of cheese made without a cow is a dent in that tab.
Every food manufacturer that switches to animal-identical casein is one less reason to keep a herd in a stable. Margaret’s Finest takes it from here. From one protein to a whole platform, way beyond cheese, to categories that don’t even have names yet.
The conversations at IFT were electric. Will and Lana held court in the buzzing, badge-lanyard heat and people leaned in hard. Contacts were made, partnerships sparked. Seeds planted, even in scorched earth.
The trail out of Ghent is longer than we imagined when we first built a cow out of steel and asked what it could do. But the view from here, with the frontier wide open and the whole protein world waiting to be mapped, is something else entirely.
